Peel and chop the <strong>Tarocco oranges<\/strong>, take off the white pith and seeds. Add some <strong>tomatoes<\/strong> (better if from <a href=\"\/en\/?p=3812\"><strong>Pachino<\/strong><\/a>), <strong>pitted olives and <\/strong><strong>thinly sliced red onion<\/strong>. Season with salt, mint, basil and <strong>extra virgin <\/strong><strong>olive oil<\/strong> (choose from <strong>Sicilian PDO<\/strong>). Serve cold and experience the <strong>true essence of Sicily<\/strong>.<\/p>\n<p>PASTA, SWORDFISH AND ORANGES<\/p>\n<p><strong>Pasta with swordfish and Sicilian oranges<\/strong> combines the scents, flavours and colours of the island. The tasty Sicilian oranges perfectly combine with Messina swordfish and <a href=\"\/en\/?p=3615\"><strong>Bronte pistachios<\/strong><\/a> \u2013 it&#8217;s a triumph of taste! Fillet the <strong>swordfish<\/strong> and cut it into small pieces. Put a pot of water on the stove to cook your favourite pasta. Warm <strong>extra virgin olive<\/strong> oil in a nonstick pan, add <strong>a little chopped onion<\/strong> and fry it for a few minutes. Add the swordfish chunks, <strong>salt and pepper<\/strong>. When the fish is almost white, <strong>grate the peel of one orange<\/strong> and set it aside. <strong>Squeeze out the juice<\/strong> of the fruit, pour it into the pan with the fish and let it cook until the sauce has slightly thickened. Turn off the heat and add <strong>a handful of pistachios<\/strong> and the grated orange peel. Your seasoning is ready: drain the pasta and add it to the sauce. Once served, sit down and breathe in Sicily.<\/p>\n<p>SICILIAN ORANGE JELLY<\/p>\n<p>The Sicilian orange jelly is a very easy alternative to the traditional <a href=\"\/en\/?p=2451\"><strong>gelu i muluni<\/strong><\/a> (<strong>watermelon frost<\/strong>). It&#8217;s a <strong>dessert<\/strong> for a perfect island lunch, or a good, <a href=\"\/en\/?p=48195\"><strong>healthy &#8220;grandmother&#8217;s&#8221; snack<\/strong><\/a>. To prepare it, you need <strong>about three oranges<\/strong> to make <strong>500ml of juice<\/strong>. If you want the jelly to be clearer, you can further filter the juice. In a glass, melt, without leaving lumps, 4<strong>0g of cornstarch in 100ml of <\/strong><strong>juice, and put the remaining 400ml in a pan with 80g of caster <\/strong><strong>sugar<\/strong>. Boil and add the juice to the melted starch. Cook all together <strong>on a low flame<\/strong> <strong>for about 5 minutes<\/strong>, constantly stirring. When it becomes creamy, pour into moulds. Let it cool and then <strong>refrigerate <\/strong>for about 4 hours.
